In the real estate business, those are commonly known as "foursquare" style.
In construction vernacular, those square top houses would have what we call a hip roof. Sometimes called a hipped roof, as well. No ridge, all hips.
There are still some of these square top houses out in Titusville, near the old gravel quarry that's been converted into an artist colony.
